Pack tortillas with beef patties, lettuce, pickles, cheese and your favourite sauces to make a crowd-pleasing Friday night dinner for the whole family

Combine the mince, shallots and dried herbs in a bowl until well combined (do this easily by scrunching it all together using your hands). Divide the mixture into eight balls.
Press one ball down onto each tortilla to create thin burger patties that fill most of the tortilla, but with a small border of about 3cm.
Heat a drizzle of oil in one or two large frying pans over a medium heat and fry the tortillas, meat-side down, for 6-8 mins until the meat is cooked through (lift the tortilla up to check), pressing the tortilla with a spatula while cooking. Once cooked, flip over, top with a slice of cheese and cook for 1-2 mins more. (You'll need to do this in two or four batches, depending on how many pans you have.) Serve the tacos filled with your favourite toppings.
